Fruit preserves    preparations of fruits, vegetables and sugar, often stored in glass jam jars. Many varieties of fruit preserves are made globally, including sweet fruit preserves like strawberry or apricot. The ingredients used and how they    prepared determine the type of preserves; jams, jellies, and marmalades are all examples of different styles of fruit preserves that vary based upon the fruit used. In English, the word 'preserves'    used to describe all types of jams and jellies.

Jam    created by boiling fruit with water and adding a sweetening ingredient. In Canada, jam must contain at least 45% of the named fruit. Jam may also contain small amounts of artificial pectin, the substance that causes the thickening that is characteristic of jams and jellies, if there    a deficiency in natural pectin.
